Grilled Eggplant

For 2 servings:

  • 1 clove of garlic (finely chopped)
  • 1 tablespoon Olive oil
  • 4 Mini tomatoes
  • 60g Meat sauce (store-bought)
  • A pinch of black pepper
  • 2 eggplants (halved lengthwise, with crosshatch cuts on the flesh)
  • Italian parsley (finely chopped), to taste

For the source:

  • 30g Sour cream
  • 30g Yogurt
  • 1 tablespoon Olive oil
  • 1/4 teaspoon salt
  • A pinch of black pepper



In a bowl, mix together sour cream, yogurt, olive oil, salt, and black pepper. Set aside.

Turn on abien MAGIC GRILL, heat olive oil over MID heat. Add chopped garlic and grill until fragrant. Add quartered mini tomatoes, meat sauce, a pinch of salt, and black pepper to the grill. Bring to a simmer. Once done, remove from heat and set aside.

Place halved eggplants, flesh side down, on the grill. Cook until heated through and grill marks appear. Season with salt and black pepper, then flip when browned on the underside.

Pour the prepared sauce over the eggplants. Once heated through, transfer to serving plates. Drizzle the prepared sour cream sauce over the grilled eggplants. Garnish with chopped Italian parsley.
